Update from the past 48 hours…

Lunch on Tuesday: Hummus, cheese, and veg wrap with side of 0% greek yogurt, freeze dried fruit and new almond butter… again, Thanks Mama Pea for your crack wrap inspiration! The lady doesn’t lie!! It’s sooo good!

Tuesday night was Taco Tuesday at T Flats after Dance Trance! Fun times!

Breakfast the next morning…clearly I’m addicted to The Peas and their blog recipeas.

Yumm. Topped with Almond butter and Peanut butter.  Love it.

Breakfast this morning with a side of un-pictured Statistics homework

Smoothie with Pure Protein powder, 1 c UVAB, 1/2 banana, 1/2 c blueberries, ice, equal, 1/2 tsp xantham gum, whirred up and topped with 2 T raw oats and 1 T Costco PB. Deeeeelishhh!

Today is my Friday! No school for me tomorrow. Wheeeee!

Tuesday Morning

So.. picking up where I left off yesterday…

I spent the afternoon doing statistics homework and watching Bride Wars… great combo.

I had quite a few unphotographed snacks including a PB&J Uncrustables, freeze dried fruit (SO GOOD), an orange, and some edamame.  Oh and a cup of decaf with Unsweetened Vanilla Almond Breeze.  I love using that stuff as a creamer.

Then I went to Dance Trance, my fave part of the day.  Elisa our instructor killed us!! We were all sweating so much that the floor was sticky and the mirrors were fogging up!  Love Dance Trance!!

I grabbed a falafel pita from Pita Pit on my way home.

I have to say, while it was pretty good, it tasted as if the falafel had been previously frozen and there wasn’t enough hummus for my liking! I love hummus.  On the side there is another cup of decaf with almond breeze.

Eaten at my desk in my room while reading some other blog about banana splits on a stick.  Hi Mama Pea!!

This morning I woke up REALLY SORE!!

After letting Sophie out I made myself a smoothie for breakfast instead of my regular oats in hopes of saving up for a birthday celebration tonight!

Into the blender went 1 scoop of Pure Protein powder, a cup of almond milk, 1/2 c blueberries, 2 equals, and a tsp of xantham gum.  (This breakfast is inspired by Mama Pea and Kath!)

All blended up with some ice and topped with 2 TB of raw oats and 1 TB PB.  The xantham gum really makes the smoothie consistency like soft serve so you can eat it out of a bowl with a spoon.  So fun!

Well here I go for round 2 of school today! At least I have Dance Trance to look forward to tonight!! ;)

I’m officially a student again!

Statistics was pretty painless.  The only thing that sucked was having to sit for 1.5 hours!  I always have to go to the bathroom and can’t hold it that long!  Sorry if that’s TMI! ;)

Anyways, here’s my lunch!  It was pretty delicious! Quesadillas are something that’s easy to make in an apartment setting and the varieties you can choose from are endless!! They are also pretty budget friendly.

This contained edamame, low fat mexican style shredded cheese, and diced bell pepper.  All in a whole wheat wrap with some veg and hummus on the side.  Can’t forget the salsa! See ya for dinner!

Breakfast May 14, 2012


Today’s the first day of summer classes, here’s what I had to get me going:

This breakfast was inspired by Kath at katheats.com and her whipped banana oats!

I used 1/3 c oats, 2/3 c almond milk, 1/2 a banana, 1/2 c pumpkin, 2 equal packets, and 1 tablespoon each of Sunflower butter and peanut butter.  I am a nut butter fanatic, so I like to cut calories with only using 1/3 c oats and 1/2 a banana so I get to have more nut butter!! ;)

Add the almond milk, 1/2 banana, cinnamon, vanilla, and oats into your pot to start.

Put the heat on about medium and stir until you run your spatula across the oats and it leaves a “trail.” ;)

Now it’s time to add your equal and pumpkin.  Don’t add the nut butters yet!

Whip the oats until everything is combined.  Then put into a pretty bowl. :) I like to put the nut butters on top instead of mixing them in. Wish me luck on my first day of school!!
